TEXAS BRISKET-AWARD WINNING

Coated with our Moo Moo Massage Powder and Slow cooked for 14 hours over hardwood charcoal, oak and dried Michigan cherry pits.  We constantly spray the meat w an “Apple/Bourbon” mixture.  We then wrap up these puppies up and hold them hot for another 8 hours.  Former KCBS Blue Ribbon Winner.  Even people from Texas love this item.

PULLED PORK

Rated number 4 Pork dish in the Country by The Travel Channel and as seen on Man Fire Food of The Food Network.  Our Pork Butts are Coated in our Piggy Massage Powder, slow cooked for hours just like we do the Texas Briskets.  We cook ours at a lower temperature for a longer time which helps make a big difference.

BBQ CHICKEN-AWARD WINNING

Usually legs and thighs, just like the competitions we used to compete in……slow cooked, basted frequently…..tangy, sweet and almost fall off the bone.

KICKED UP SWEET ITALIAN SAUSAGE

Most underrated menu item we have….we slow cook these puppies in a mixture of dark beer and mustard glaze and mix in sautéed sweet peppers and onions.  Once you try its tough not ordering these…..but they do have a little kick to them.

SHREDDED CHICKEN

Slow cooked Chicken that we pull apart and season w our Chicken Massage Powder.  Very healthy and great for sandwiches.

BABY BACK RIBS

AWARD WINNING pork baby back ribs are slow cooked for hours and we use our Piggy Massage Powder and vinegar/apple juice mixture to baste throughout the cooking.  Low and Slow is the key to these and once again hardwood charcoal, oak and dried cherry pits.  *$2.00 ADDER PER PERSON

GREEN MENACE PORK WRAPS

As seen on “Man Fire Food” and The Travel Channel….. We take our slow cooked Pulled Pork, Green Chili, hit it with a squirt of cilantro cream sauce, squirt of bbq sauce, stuff it in a wrap then toast it to perfection.  Very much a customer favorite.

Fresh Salmon, marinated in our own sauce, covered with a dry rub and cooked over natural hardwood charcoal on top of ½ thick cedar planks that have soaked overnight in water/bourbon mix

SLOW GRILLED BEEF TENDERLOIN

Choice cut of tenderloin seared over a high heat and then slow cooked indirect heat method with oak, hardwood charcoal, and cherry pits to a perfect medium rare….feedback…”Incredible!!”

Boneless Pork Loin coated in our Colonel Angus Mustard as well as our own Pork Rub and slow roasted for hours over hardwood charcoal and dried Michigan cherry pits.
